A highly sustainable and technological catering model, with a menu enriched by locally sourced products of high organoleptic quality and intense flavour, obtained from waste-free and environmentally friendly cultivation. The synergy between a Michelin-starred restaurant, a producer of advanced vertical farming systems and a supplier of gas sourced entirely from sustainable sources has given rise to a new way of thinking about the supply of raw materials.

The protagonists of this project are Da Vittorio, Planet Farms and the SIAD Group, who have joined forces to create a “vertical farm” on the restaurant's estate in the province of Bergamo. In an atmosphere enriched with bio-CO2, this vertical farm produces around twice the normal quantity of vegetables with excellent taste characteristics.
